If you grew up in an Italian family like I did, chances are you had Sunday Dinner  (at 1:00 PM) each week with your family. And, if you were lucky enough like I was, that included your extended family. Each week from when I was a child until well into my 20’s, we were all at my Nonna's house every Sunday for dinner and it was ALWAYS  Sunday Sauce (If you are Italian and you aren’t eating Macaroni and a red sauce on Sunday, is it even Sunday? lol)

Maybe you are wondering about Sunday Gravy? Let me help settle the debate…it’s always Sauce and never Gravy (LOL). Italian Sauce vs Italian Gravy really depends on what it’s called in your Italian family. Another commonly used term you may have heard for the traditional Italian sauce is Sugo. 

This tradition, though I didn’t appreciate it at the time, was something that just isn’t possible in today’s world of activiti

es, sports, and other obligations.  Looking back now, it’s those family dinners became a big part of who I am. Whenever possible, l will have family dinner and make my Authentic Italian Sunday Sauce and try to keep the tradition going in some way.

In NAPLES when you make RAGU NAPOLETAN with Beef Braciola,

Pork Ribs, Sausages, and cuts of Beef (Beef Neck or Chuck). the meats simmer until they

become Tender.

To Serve the RAGU, you first have MACCHERONI with some of the Tomato Sauce, but no Meat.

After you have the Maccheroni (Pasta), you eat the Meats as the Main Course of the meal.

This Ragu Napoletan is what came to be known in America, by Italian-Americans, as either GRAVY, SUNDAY SAUCE, or SUNDAY GRAVY.

This Ragu (Sauce) is the single most SUPREME Dish of the Italian-American Community.

Depending on who is making it, the meats in the Sauce (Ragu) will vary from Person to Person, and Family to Family. The most popular Sunday Sauce Gravy is made with Meatballs, Sausages, and Braciola. Others might make their SAUCE with Meatballs, Sausages, and Pork Ribs.

Some might make their Sunday Sauce with just Meatballs and Braciola, or with Pork Neck, Meatballs, and Sausages. 

No matter how you make it, and what you put in your Sauce, the most important thing is that it taste good.

And let's not get into an argument over what it is called. Depending on your family and where you live in America, you might call it Gravy, or you might call it Sauce. It doesn't matter. Remember, as long as it taste good and people are happy eating it.

Remember to make it with lots of Meatballs, so you have some leftover after your Sunday meal, and when Monday rolls around, you can make some tasty MEATBALL SANDWICHES for Lunch.  "What's Better than that?"

"Niente" !!!


So, in Napoli, the Neapolitans serve the Pasta and the Meats separately in two courses, while most Italian-Americans eat the Meats on the same plate as the Maccheroni. No matter which way you eat it, just Enjoy !!!

"We posted this video for 2 reasons. First of all, it's Sunday Sauce, so we put it up on that alone. Secondly it's Mario Carbone talking about and making his version of Sunday Sauce. Mario Carbone in Chef and a partner at Carbone Restaurant in Geenwich Village. The restaurant is famous and controversial for its very high prices. Some people love it, others don't. Anyway, Mario is here making his version, which looks pretty good, but the instructional part of this piece is disappointing and not good at all. It should be better, but it's not.
